I would like to note (possibly for new, unaware, vegetarians):
parmesan is made with animal rennet (an enzyme from a calf’s stomach lining – vegetarian versions made with microbial or vegetable rennet are widely available by looking for labels that specify “vegetarian rennet”).
This isn’t always common knowledge and I’m not placing blame anywhere – just reminding everyone where I food comes from! There are well-known brands that make vegetarian parmesan.
With the vegetarian parmesan, I look forward to making this soup!

I don’t use navy beans often so I was pleased how this turned out. I used a slower cooker with only 6 cups of broth (after soaking the beans overnight) and it was the perfect consistency for me. I used just a little less seasoning than was listed to account for my reduction of liquid. And to keep it dairy-free I omitted the parm, but added some frozen spinach and a squeeze of lemon at the end. Really satisfying, healthy, and customizable.
