Vegetarian Butternut Squash and Beer Chili with Optional Ground Turkey

I am in DIY heaven/hell. Pinterest is my best friend/worst enemy. Making our new house feel like a home is such fun/utterly exhausting.

I’m a little conflicted. Can you tell?

I really am thrilled we were able to make the leap into our new home, and we ended up in such a great place, too. Totally worth it. It’s just a little overwhelming and I want the entire place to feel like home NOW.

This vegetarian butternut squash and beer chili absolutely, 100% helps. Chili could not be more cozy and homey if it tried.

Cheddar Beer Cornbread

Is it a quick bread? Is it a yeast bread? Is it cornbread? I don’t even know. I just know it seems, to me, a stunning combination of all three. With cheese.

What I can say without a doubt is that it is pretty much pure awesome.

It’s based upon a recent discovery, Sara Moulton’s beer bread. Which really, apparently, is her fan Debbie Bickford’s beer bread. What I say to both of them is this: Thanks, Sara and Debbie, for the recipe, which is really not so much a recipe as a it is a revelation here in our kitchen.

Black Bean Tostadas with Slow-Cooker Cheddar-Beer Chicken (or Not)

Tostadas, a Mexican dish that consists of a crisp corn tortillas layered with refried beans and all kinds of other good things, lend themselves well to a variety of palates. Diners can assemble their own, adding what they want, leaving off what they don’t.

So, naturally, they’re perfect for the mixed veggie/carnie house. In this version, the meat-eater gets a healthy dose of spicy, tender shredded chicken slow-cooked in beer; the vegetarian still gets plenty to eat, including delicious, smoky homemade refried black beans. Win all around.
