I let the broth sit for a couple hours with all the ingredients, and we added back in the shitake mushrooms and carrots. We had all the toppings and kept it vegetarian. my partner and I were both shocked at how exact this broth was to any pho we’ve had in a restaurant. Will absolutely make again! Thank you!

I added some cardamon seed, toasted, and a splash of fish sauce. Maple syrup (real) can be substituted for the brown sugar. This is my favorite pho go-to recipe. If you’re feeling under the weather, I especially recommend making this, I swear it has healing properties!

We both hate lemon grass so I left it out. I’ve never been able to have a vegetarian/vegan Pho soup before and this was AMAZING! I searched for a recipe that started from scratch. No broth, just water and spices. And I’m so happy I came across this one. Thank you, I will be keeping this one close 😊

Just a thought! Granted, I’m not a mushroom lover, so I have to add some more flavor and greens to mine! Thanks for sharing your recipe!

Did you use a 16″ piece of cinnamon instead of a single piece of 6″ cinnamon? That’s all I can think might have happened. My friend was reading the recipe and said “Where can I find a 16″ piece of cinnamon?” After the confusion was cleared up we had a good laugh. This broth is amazing and definitely worth your time to try again.

My veggie daughter discovered pho on a recent vacation , then my son jumped on board – t’s a miracle that two kids want and like the same thing, so I knew it was time to add this to my list of new things to try! As my broth is simmering, I got sucked into your website and am SO delighted not to mention your beautiful photography on IG! You have answered my everyday dilemma with a meat-eating hubby, veggie daughter and picky son! Thank you!
