It’s versatile too – I sometimes add greens like kale or arugula and my best friend adds zucchini. You can’t go wrong!

In reply to Kare. This recipe is still in our rotation after 3 years. You CAN freeze it without the pasta. Then, thaw it out, heat to boiling and then add pasta. Delicious.

I’ve been searching for this recipe ever since having a delicious bowl of it for dinner one night while in Florence. This soup was DELICIOUS! Even my carnivore non-soup loving fiancé loved it. He went back for seconds. It is so comforting and satisfying, the toppings are a must too! Added a squeeze of lemon as well. Can’t wait to try more from site! Thank you!

I have been making this recipe once a month every month since the beginning of fall but only just now thought to leave a review. Obviously I love it. It’s the closest thing I’ve found to what I grew up with my Italian mom making. It’s real comfort food and feeds us for a whole week every time I make it. It’s a staple I’ve been especially appreciative of during this stressful time and it doesn’t need a lot of ingredients to be delicious. I like to add some kale and a splash of lemon juice at the end for a little added greenery!

In reply to Tara Atchison. Cooked pasta can be tricky to freeze, so I'm not sure I would freeze this one. I'm glad you like the recipe though! :)
