Instead of red or yellow onion, I used the white part of a green onion. I also added about a teaspoon of capers with some of the brine. My Reubens have never been better.

I agree it is so much better than store-bought! I usually use chili sauce instead of ketchup and pimentos instead of relish and only add finely chopped onion and fresh parsley and a little salt besides the mayo – check it out and let me know what you think! 🙂

This came out perfect!
I came home with all the ingredients for Rueben’s only to find that I was out of Thousand Island dressing.
This is the only thousand island dressing I will put on my Reubens from now on.

I did leave out the onion, garlic, and Tabasco,  just because I wanted to keep it really simple. I added 1/2 Tbsp more of relish and used white wine vinegar instead cause it’s my fave vinegar. I also added 3/4 tsp fresh squeezed lemon juice for some extra zing.  I did make my own homemade mayo from downshiftology website. I try to make my recipes clean as possible, and wanted mayo made with avocado oil. I found relish and ketchup not made with high fructose syrup. It tastes perfect. I know I didn’t follow recipe exact, but I wouldn’t have been able to make this so delicious without this as a great base! It takes exactly how I imagine it should! Thank you SOOO much!!
