I had to substitute half the ingredients out against my will (almond flour gone rancid, not enough maple syrup, don’t like the taste of coconut oil) and although I did have to add more oat flower by weight than in the recipe, they still turned out great!

Yes for sure! I freeze them often. They only need a few minutes at room temp to thaw but taste pretty darn good straight out of the freezer too.

I don’t push the cookie down but leave them in a ball from my cookie scoop and I put a minute or two more on the time because they are so soft in the middle and a little crisp on the outside. This week I tried a new twist by dipping the tops in melted chocolate chips and brought it to a family gathering… they disappeared! So I was requested to make them again the same way and bring to today’s family gathering. Love them!!!
