This is somehow a bulletproof recipe. I had to substitute half the ingredients out against my will (almond flour gone rancid, not enough maple syrup, don’t like the taste of coconut oil) and although I did have to add more oat flower by weight than in the recipe, they still turned out great!

So if I’m switching the oil for butter is it the same amount or is there a difference?

In reply to Shakeela Hanif. Yes for sure! I freeze them often. They only need a few minutes at room temp to thaw but taste pretty darn good straight out of the freezer too.

A friend passed this recipe along to me a couple years ago because we have lots of different food allergies in our family (dairy, gluten, corn, peanuts). I am now making them for the third time THIS WEEK. I don’t push the cookie down but leave them in a ball from my cookie scoop and I put a minute or two more on the time because they are so soft in the middle and a little crisp on the outside. This week I tried a new twist by dipping the tops in melted chocolate chips and brought it to a family gathering… they disappeared! So I was requested to make them again the same way and bring to today’s family gathering. Love them!!!
